Serves: 4 persons
Time: 4 hours (including marination time)
1 kg Godrej real good chicken
5-6 cloves
4-5 black pepper
1 inch cinnamon stick
4 cardamom
3-4 bay leaves
5 dry red chilies
1 tsp ginger garlic paste
1 tsp everest chicken masala
4 tbsp ghee
For chilly paste:
10 dry red chilies
2 tsp coriander seeds
8 garlic cloves
1/4 cup water
For marination:
4 tsp curd
1 onion paste
1 tsp turmeric powder
1 tbsp red chilly powder
2 drops of lemon juice
salt
For garnishing:
finally chopped coriander
Method:
- Soak 10 chilies in water for an hour.
- Add coriander seeds and garlic cloves and make a smooth paste in mixer.
- In curd, mix 2 tsp onion paste, 1/2 tsp turmeric powder, 1/2 tbsp red chilly powder, lemon juice, chilies paste, salt and marinate chicken pieces for 2 hours. Keep 1 tsp chilies paste aside.
- In a frying pan, heat ghee and saute cloves, black pepper, cinnamon, cardamom and bay leaves.
- Once you smell nice aroma of all spices, add remaining onion paste and saute.
- Then add 5 whole red chilies, ginger garlic paste, 1/2 tsp turmeric powder, 1/2 tbsp red chilly powder, everest chicken masala, 1 tsp chilies paste and saute till the mixture starts leaving ghee.
- Add marinated chicken pieces and move them from all sides.
- Cover the pan and cook chicken on medium heat for 10-15 minutes.
- Now add remaining mixture of marination, 1 cup water and salt as per taste and bring it to boil.
- Chicken zatka is ready.
- Garnish with coriander and serve with roti or rice.
